Just a Quick Garden Pasta

I don't have much time today. I've got to work out and get to the docs for some tests. Just routine, since having cancer the docs double check anything that may come up in a blood test etc. It's just that time of year, to make sure all is good & I'm still healthy.
I'm not sure which would be better, having tests done on me, or standing in line for a cattle call for THE VOICE? I haven't turned on the news, but I'm sure there are hundreds standing in line to get 2 seconds of time for the judges.

We were suppose to be out of town today for a business meeting, but it has been rescheduled due to all of our computer problems last week.  It's funny that it got rescheduled after all of the quandary of should we cancel so I could go to the live auditions?  Should I just do a DVD? What song do I sing? What torture. As it turns out the best decision was to send in the tape.

Yesterday after a day of blood tests, shopping, picking up dry cleaning, getting our mail, coming home unpacking the car, putting everything away, emptying the dishwasher, etc., etc., etc. I had to start to put all my documents back on my computer and set it back up again. I did get my first newsletter done and posted, now I have to get it emailed out!
I did get in the studio for about an hour or so, by then it was dinner time and Terry was out having a cigar & cocktail. I knew he would be wondering into the studio asking "what are "we" doing for dinner"? So the "diva's" & I trotted out to the garden to see what was waiting for us.









Zappa came to join in on the fun or to beat up Sophie, not sure which.


Our bounty from our garden forge. My new cocktail idea. Cherry infused vodka with soda water and sour cherry bitters. Light & tasty! I think I'll put some flavored sugar around the rim next time.



My white eggplant. Peeled cut and salted to remove excess water & bitterness.

Chopped onions, garlic, eggplant, squash & ricotta cheese 

Heated a good amount of OO in pan & fried the eggplant (I wanted it a bit crisp  not soggy). Once it was brown I then added my onions.

Added some yellow bell pepper & assorted cherry tomatoes to mix Then I added the garlic so it would not burn.

Cook over medium heat until golden.

Towards the end of the cooking, I added my biggest juiciest tomato!

Time to make it cheesy. I grated  Parmigiano Reggiano,  Pecorino cheese over the mix. Put some chunks fresh mozzarella & some chunks of ricotta.
I added cooked Ragatoni & some fresh herbs and there you have it, Cheesy Garden Pasta!

  1. Ya know what...this sauce sounds like it would be great with a grilled chicken breast. Just a little topping over a nicely done piece of chicken and a garden salad on the side. Hmmmm!
