A LIGHT SUMMER WRAP

Here's an easy light shrimp wrap from my SKINNY DIVA recipe collection.

                                           
WRAP A LITTLE LOVE IN YOUR HEART
(SKINNY SHRIMP WRAP)

3.5 oz of raw shrimp (about 8-10)
Slice of cucumber (about 1 tsp) Chopped into small pieces
1 green onion slices
1 Small orange bell pepper (about 1 Tbls) chopped into small pieces
¼ Celery Stick chopped into small pieces
3 Sprigs of Cilantro tore into small pieces
¼ of a tomato chopped
¼ C Arugala tore into small pieces
¼ C Spinach tore into small pieces
2 Lrg. Romaine lettuce leaves (remove bottom hard part of leaf)
Braggs Seasoning (An amino acid sold in most health food stores, it taste like a bit like soy sauce but better for you).
Lemon
Old Bay Seasoning
Chili powder
Garlic and Onion powder if you wish
Black pepper
Romaine Lettuce

Season the shrimp to taste with a squeeze of lemon splash of braggs (it’s an amino acid that taste like soy sauce but better for you). Coat shrimp with all the seasonings.
Put on broiler or on bbq. Watch closely so they don’t overcook. This should only take a few minutes. Try to turn and get a bit of crust on both sides. You don’t want them to cook past the shrimps turning into a C shape or they will be over cooked.
While shrimp is cooling mix all the veggies together except for the Romaine. Squeeze some lemon juice (about a ¼ lemon more to taste) and Braggs (a quick squeeze) over and mix.
Shrimp should be cool enough to work with. Remove tails and break or cut shrimp into small pieces into veggie mix. Stir together and put on lettuce leaves and eat like a taco!

For an added kick finely chop some fresh hot pepper such jalapeno and add to veggie mix!

  2. I hope you like it. I don't know if they have that crazy HGC diet in South Africa. It is insane it is 500 calories a day. I came up with this when I was doing that diet.
